I’ve Got Your Diabetes Right Here

Here’s a hard truth you’re gonna have to wrap your mind around: I am pretty awesome at baking. Keep in mind, I am HORRIBLE at lots of other things in life, but since I am trying to have more confidence as part of “2010 - The Year I Get it Together” I am starting with my mad baking skillz.

Exhibit A: Chocolate Chip Scones

I had an amazing chocolate chip scone last week and have been obsessively thinking about recreating it ever since. Yesterday, I came pretty darn close; thanks to some tiny modifications to Alton Brown’s basic scone recipe. They are dense, ever so slightly salty, and packed with Ghirardelli chocolate chips (thanks for the suggestion, Carrie).

I am not as awesome at preparing full dinners, cooking meats or “throwing something together” from the fridge. But me and my food scale and some flour and sugar can make it happen 8 out of 10 times.

Now, onto to stopping myself from eating them all today.

  3. Yum! Scones. I held a “tea” for my lab last week and made cranberry, orange scones. They were pretty good - a lot like biscuits, but had that flaky yet dense texture of scones - not too sweet. I had to press my luck and make some dark chocolate, raspberry scones. They were less good. I don’t know what happened. I added the liquid to the dry stuff, and there was not enough liquid. So, I thought, I’ll add a little more liquid (yogurt). Literally, as soon as I added the extra liquid, then there was like TOO MUCH liquid. I think maybe the raspberries had started breaking apart and letting their liquid into the batter, but I’m still not sure. Anyway, the batter became a huge wet mes. There was no way I was going to be able to roll it out. Despite knowing that it’s a terrible thing to do, I added more flour and some more flour. Needless to say, they were very chewy, not dense yet flaky. They tasted good, but they did not feel good in your mouth. That’s my boring scones story. My real point was to tell you how much I love scones and how my three day obsession caused me to make them. :)
